In general, things from this list (http://en.wikipedia.org/wiki/List_of_legendary_creatures_from_Japan) or this site (http://www.obakemono.com/) are game for generating jobs from Gegege no Kitaro; that said, some work better than others. Here are some notable points:
NURARIHYON: Do not choose Nurarihyon as a youkai for a job unless you have high stakes in mind. He's a recurring villain and hates Kitaro's guts. Has a dopey sidekick in Shu-No-Bon (This dude (http://img.photobucket.com/albums/v632/Dragomorph/img_syunobon.jpg)).
KITSUNE: With very few exceptions, kitsune are Bad News in Kitaro's world. A good villain choice, then.
YASHA: Has a dramatically different interpretation in Gegege no Kitaro from the traditional; the Obakemono Project site goes into a little detail about this, but yeah, more bad news.
SUNEKAKE-BABA/KONAKI-JIJI/ITTAN-MOMEN/NURIKABE: These guys are all Kitaro's buddies, though Nurikabe at least has been shown to have more than one of his species; they're all generally benevolent, though. If a job does involve them, here's a few characterization points:
Sunekake-Baba: Runs a youkai apartment complex, and also mixes sands with various properties for various uses. Jobs may involve ingredient gathering or (probably futilely) getting Konaki-jiji to pay his goddamn rent.
Konaki-Jiji: Looks like an old man, acts about as mature as a little kid. Loves booze.
Ittan-Momen: If he likes you, he'll give you a ride. A sweet guy for someone who mythologically smothers people, and heroic to boot.
Nurikabe: A big, hard working sort of guy. A sweetie -- and married, with kids!
In addition, the following youkai thus far have been seen as largely benevolent: tengus, tanuki, kawa-uso, kasa-obake.
